Pan-seared scallops with mango and avocado salsa
These scallops are an amazing appetizer, super light, delicious and really quick to prepare.

Scallops
12-16 scallops (depending on size)
Olive oil
Salt
Pepper
Mango and Avocado salsa
1 Mango
1 Avocado
2 pitted Tomatoes
1 chili (mild to medium hot)
Juice from 1 lime
Juice from 1/2 orange
Fresh cilantro to taste (optional)
2 tbs honey
2 tbs olive oil
Salt & Pepper
Instructions
Put the scallops in a bowl together with olive oil, salt and pepper and stir gently until the oil covers all the scallops.
Dice the mango, avocado and tomatoes inte small (1 sq cm) cubes.
Mix together with chopped chili, garlic and cilantro in a bowl.
Add lime and orange juice and finally taste with honey, salt and pepper.
The salsa can be prepared a few hours in advance.
Sear the scallops in a very hot pan for a about 30 seconds on each side. You don't want them over-cooked or they'll taste like rubber.
Serve with some chopped cilantro (if your guests find it as deliciuos as I do, otherwise just skip it).
